Yorkshire Day: Spotlight on Holme-on-Spalding-Moor

This month, we celebrated Yorkshire Day, a day that’s dedicated to revelling in all that makes the White Rose County such a special place to live, work and visit. Here at Meadow, this is a region that certainly holds a special place in our hearts as it’s home to our Holme-on-Spalding-Moor (HoSM) site.

Set amid the beautiful countryside in the East Riding of Yorkshire, the site is an integral part of the Meadow family and it’s where we produce a great deal of our confectionery products.

To mark Yorkshire Day, in our latest blog, we’ll explore the importance of the ingredients we produce at Holme-on-Spalding-Moor.

 

Holme-on-Spalding Moor

Our site is located in the picturesque village of Holme-on-Spalding-Moor, equidistant between Hull and York.

Historically, the village has always been intrinsically linked to agriculture, making it the perfect place for Meadow to operate from, given the importance of farming to our business.

Our 19-acre Holme-on-Spalding-Moor site is the only factory in the UK to independently manufacture both condensed milk and chocolate crumb ingredients and it’s also where we produce our smooth soft cheeses.

 

Our ingredients

Chocolate crumb

Chocolate crumb is certainly an unsung hero as it’s a key compound ingredient in the creation of dairy milk chocolate, along with a range of other chocolate flavoured products.

In Britain, we consume a combined 660,900 tonnes of chocolate each year, which equates to 11kg per person. So, it’s difficult to understate the importance of this ingredient, especially for our customers who know they can rely on our Holme-on-Spalding Moor team to create high quality, sustainably produced chocolate crumb.

Our chocolate crumb is the secret ingredient that gives Great British milk chocolate the distinctive taste and flavour that we all love, and it’s made from a blend of sugar, milk, and cocoa liquor.

When this ingredient is vacuum-cooked, it can then be dried and milled to create the powdered crumb product that forms the basis of so many chocolate treats. Our customers love the fact that Meadow’s chocolate crumb can be quickly and economically incorporated into their manufacturing process.

What’s more, our crumb, which possesses a unique and delicious caramel flavour, can be produced in several different cocoa strengths depending on the depth and intensity our customers require, ranging from 6.8% cocoa inclusion rate right up to 15%.

We’re also proud to hold a FLO certification, which means we’re able to manufacture chocolate crumb that can be used in Fairtrade milk chocolate products. In addition, we hold a Rainforest Alliance Certification for cocoa so it can be used in RFA milk chocolate products.

 

Condensed milk

We’re also proud to produce exceptional sweetened condensed milk at our Holme-on-Spalding-Moor site. Our condensed milk is used by the finest confectioners to produce products such as premium toffee, caramel, and fudge.

The manufacturing process for condensed milk has to be just right at every step, as our condensed milk is highly temperature sensitive. Fortunately, our skilled team at HoSM ensure that the process is fine-tuned and work with precision to ensure that the ingredient is of the highest quality meets our customers’ requirements.

Made with only cow’s milk and white sugar Meadow’s sweetened condensed milk is available in a range of fat levels from 0.2-8% and can be supplied in a variety of quantities and formats depending on the needs of our customers.

We supply over 12,000 tonnes of our sweetened condensed milk a year to our customers, who recognise the care and precision that goes into making this ingredient.

 

Soft cheese and set cultured products

The other key ingredients produced at Holme-on-Spalding-Moor are our soft cheese and set cultured products, which are produced with key technical expertise and perfectly developed to ensure a smooth and creamy texture with a rich taste.

The manufacturing process on the site has been tailored to ensure we can deliver quality, easy spread and smooth tasting cultured products.

In terms of technical expertise, the key to our sumptuous, smooth and creamy cultured products is down to our team carefully monitoring their temperature and PH control, as well as preventing any separation during the manufacturing process.

We can also offer our customers a range of fat levels from 7-30%, depending on their requirements. Our cultured products are used in a multitude of applications from cheesecakes and other desserts to sandwiches and dips
