We are the only independent manufacturer of sweetened condensed milk and chocolate crumb in the UK, manufacturing 12,000 and 5,000 tonnes of each a year respectively.

Sweetened Condensed Milks

Meadow Foods are the only independent manufacturer of Sweetened Condensed Milk in the UK – thanks to our unique manufacturing capabilities in Yorkshire.  

The origins of Sweetened Condensed Milk go as far back as Marco Polo and it had become a household staple by the time of the wars of the 1860’s.  Today it is used by the finest confectioners to produce toffee, caramel, fudge and similar products.

The manufacturing process is highly-temperature sensitive and also requires just the right ingredients.  It is produced by adding refined sugar to milk, which is then evaporated up to 73% solids.

We can supply Sweetened Condensed Milk (8% fat) and Sweetened Condensed Skimmed Milk (0.5% fat) packed in 5kg and 13kg Bag-in box, 280kg Drums, 1T or 1.3T Pallecons and Bulk Tankers. 

 

Chocolate Crumb

Meadow Foods are also the only independent manufacturer of Chocolate Crumb in the UK – again thanks to our unique manufacturing capability in York. 

Chocolate Crumb is the secret ingredient that gives British Milk Chocolate the distinctive taste that differentiates it from the darker Belgian varieties or the versions found in the lunch boxes of our friends in the United States.

Chocolate Crumb is a compound ingredient for making dairy milk chocolate as well as a range of chocolate flavoured products.  It’s made from a blend of Sugar, Dairy Milk and Cocoa Liquor which, when vacuum cooked, can be dried and milled to form a powdered ‘crumb’ product.  This crumb can be quickly and economically incorporated into the manufacturing process.

The product has a unique caramelised flavour which develops through the ‘Maillard Reaction’ that occurs during the cooking process.  This flavour is characteristic of British Dairy Milk Chocolate, which is traditionally made from crumb, while the level of caramelised flavour in the milk chocolate can be varied according to the amount of crumb added which is typically between 15% and 60%.  The ingredient is also used to deliver a unique caramelised chocolate flavour to chocolate paste/spread, chocolate ice cream sauces, cakes and cake mixes, chocolate drinks and dairy desserts as a superior replacement to cocoa powder.

We can provide a variety of crumb strengths – our classic 6.8% crumb up to a 13% cocoa liquor crumb, to allow for a stronger cocoa flavour.   

Last year Meadow Foods also acquired FLO – Certification which allows us to produce Fair Trade 13% cocoa liquor chocolate crumb for the use in Fair Trade Milk Chocolate.
